Minty Pea Mash

Ingredients

  • 2 c shelled fresh peas
  • 1 c water
  • 1/4 t kosher salt
  • 1/4 t black pepper
  • 2 T unsalted butter, cut-up
  • 1 T fresh mint leaves, chopped

Preparation

Step 1

1. Bring peas, water, salt, pepper to a simmer in a small pot.
2. Cover & cook until the peas are tender, 3-9 min. (test at 3 min; starchier peas may take longer).
3. Transfer the peas (& any liquid) to a food processor & add butter.
4. Process until the mixture is coarsely chopped, about 30 sec.
5. Add mint & pulse twice to combine.
