Ingredients
- 3 tablespoons canola oil
- 1 Vidalia onion, diced small
- 6 granny smith apples, cored and diced small
- 1/2 tablespoon grated ginger
- 1/4 teaspoon ground cloves
- 1/2 cup apple cider vinegar
- 1/2 cup brown sugar
- 1 tablespoon unsalted butter
- 1/4 cup chiffonade of sage

Preparation
Step 1
Heat canola oil in medium-size pot over medium-high heat, add onions and sauté until translucent, 5-8 minutes. Add apples, ginger and cloves, reduce heat to medium-low and cover. Allow to sweat, stirring occasionally for about 8-10 minutes or until apples begin to break down. Add vinegar, sugar and butter and bring heat up to medium and allow to simmer until liquid reduces by just over a half, about 5 minutes. Remove from heat, add butter and sage and stir until butter melts. Allow to cool and serve
