Ingredients
- 1 6lb beef rib roast
- 2 T finely chopped shallots
- 4 tsp coarsely ground black pepper
- 1 tsp coarse salt
- 1 tsp dried basil, crushed
- 1 tsp dried thyme, crushed
- 1 T olive oil
Preparation
Step 1
Trim fat from roast. For rub, in a small bowl combine shallots, pepper, salt, basil, and thyme. Brush meat with oil. Sprinnkle rub evenly over roast; rub in with your fingers.
Preheat grill, reduce to medium-kiw. Adjust for indirect cooking. Place roast on rack in roasting pan, place on grill rack, and grill for about 3 hours or until desired doneness.
Cover with foil and let stand 15 minutes before carving.
