Stuffed Brushetta Calamari

Ingredients

  • 1 kg small squid, cleaned tentacles cut off, chopped and reserved
  • 2 Tbsp olive oil
  • 1/2 a small onion, finely chopped
  • squid tentacles, (see above)
  • 3 plum tomatoes,
  • 2 cloves of garlic, crushed
  • 2 Tbsp parsley, chopped
  • 1 Tbsp herb mix (basil, thyme, oregano, etc), chopped
  • 300 ml white wine
  • 1 egg
  • panko breadcrumbs
  • 1 tsp chili powder

Preparation

Step 1

Clean & prep squid.

Prepare stuffing by mixing olive oil, onion, finely chopped
squid tentacles, tomatoes, garlic, wine & herbs.

Mix breadcrumbs and chili powder and stuff squid and dip in egg and crumb-chili mixture. Pan fry lightly in oil.

Serve immediately garnished with capers. Serve with Lemon Aioli.
