Sicilian Skillet Chicken

My Sicilian background makes this a family favorite

Ingredients

  • 4 boneless skinless chicken breasts, pounded even
  • 2 tbsp parmesan cheese, grated
  • 3 tbsp flour
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup mushrooms, sliced
  • 1/2 onion, finely chopped
  • 1/2 tsp rosemary, crushed
  • 15 oz Italian stewed tomatoes ( I stew the tomatoes myself, but you can use canned)

Preparation

Step 1

Flatten chicken slightly. Coat with 4 tbsp cheese, then flou. Salt and pepper to taste. In a skillet, cook chicken in oil over medium to high heat until done. Remove to serving dish. Keep warm. In the same skillet, cook mushrooms, onion and rosemary until soft. Add tomatoes, cook, uncovered, over medium to high heat until thickened. Spoon over chicken, top with remaining cheese. Serve over pasta.
