Prime Rib Au Jus

Ingredients

  • 1 8-10 lb prime rib
  • 1/4 cup rosemary
  • 1/2 cup kosher salt
  • 1/4 cup pepepr
  • 1/4 cup soy sauce
  • 1/4 cup red wine
  • 2 beef bouillon cubes

Preparation

Step 1

Place the prime rib in a roasting pan. Rub with rosemary, salt and pepepr. Roast at 300 fo 2.5-3 hours. Remove the roast to a serving platter.

Add the soy sauce, wine and bouillon cubes to the pan juices. Add enough water to measure 2 cups liquid. Simmer for 5 minutes, stirring to deglaze the pan. Skim the surface. Serve with the roast.

You may thicken the sauce with a small amount of cornstarch dissolved in cold water or red wine.
