Barbecued-Chicken Quesadillas

Ingredients

  • 2 boneless skinless chicken breast halves
  • 1/4 cup honey barbecue sauce
  • 1/2 cup chopped tomato
  • 1/4 cup chopped onion
  • 2 tablespoons cilantro
  • 2 flour tortillas, 8"
  • 1/4 cup lowfat cheddar cheese

Preparation

Step 1

1. Heat oven to 400.

2. Saute chicken in sprayed pan 6 minutes/side. Remove from skillet and shred. Toss with sauce.

3. Combine tomato-cilantro. Spoon half of chicken down center of each tortilla. Top with tomato mixture and cheese. Fold over and place on a baking sheet. Bake 4 minutes or until cheese melts.

Notes: These were great! And terrifically easy. A good use of leftover chicken. Used a hickory bbq sauce, whole wheat tortillas. Delicious.
