Chocolate Chip Mini-Muffins

Ingredients

  • 1/2 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup miniature semisweet chocolate chips

Preparation

Step 1

1 In a large bowl, cream sugar and shortening until fluffy. Add egg, milk and vanilla; mix well. Combine dry ingredients. Gradually add to creamed mixture; mix well. Fold in chocolate chips. 2 Spoon about 1 tablespoon batter into each greased mini muffin cup. 3 Bake at 375º for 10-13 minutes or until muffins test done by inserting a toothpick in center of muffin. 4 Cool in pan about 10 minutes before removing.
