Dilly Beans

Ingredients

  • 2 pounds trimmed fresh green beans
  • 1/4 cup salt
  • 4 heads dill
  • 1 teaspoon cayenne pepper
  • 2 1/2 cups vinegar
  • 2 1/2 cups water
  • 4 cloves garlic

Preparation

Step 1

Pack beans lengthwise into hot jars leaving 1/4" headspace.

Into each jar add 1/4 teaspoon cayenne pepper, 1 garlic clove & 1 dill head.

Combine remaining ingredients and bring to a boil. Pour this mixture into jars leaving 1/4" headspace.

Remove air bubbles. Adjust caps. Process jars in boiling water for 10 minutes.
