Candied Sweet Potato Hash

Ingredients
- 3 medium sweet potatoes or yams, cut in small cubes
- 1-2 large granny smith apple, peeled cored and cut in same size "cubes"
- 1/4 stick butter
- 3-4 tbsp olive oil
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 2 cloves garlic, minced
- 1/4 cup brown sugar
- 4 tbsp balsamic vinegar
- salt and pepper to taste

Step 1
Heat olive oil in large pan, over medium heat. Add garlic, cook 3 min. Add the apples and potatoes. Stir to coat. Add cinnamon, nutmeg, ginger, salt and pepper. Stir well. Cook for 4-5 minutes.
Move potatoes/apples to create a "hole" in the center of the pan. Place butter in the "hole" and melt. Stir to coat well with butter. Add the brown sugar and mix well. Continue to cook until potates have become soft and tender. Add balsamic vinegar, stir well and finish on low heat for another 5 minutes until potatoes are completely soft.
