Chocolate Ganache Icing
- 5 ounces unsweetened chocolate
- 1 cup heavy cream
- 1 1/4 cups sugar
- 1/4 pound sweet butter
- 1 teaspoon vanilla
Chop the chocolate into small pieces. Set aside. In heavy 3 quart saucepan stir the sugar and cream to mix. Stir with wooden spoon over medium heat until mixture comes to a boil. Reduce heat and simmer for EXACTLY six minutes.
Remove from heat and add the chocolate. Stir until melted. Add the butter and stir until melted. Add vanilla and stir.
Fill large bowl with ice and water. Place the saucepan of icing into the bowl and stir frequently until mixture begins to thicken. Remove from water bath and stir/beat briskly until it becomes smooth and thick enough to spread, approximately the consistency of heavy mayonaise.
