Ingredients
- 1.5 lbs fresh green beans, trimmed
- 2 T red wine vinegar
- 2 T EVOO
- 2 t Dijon mustard
- 1/2 t salt
- 1/4 t pepper
- 1 c grape tomatoes, halved
- 1/2 small red onion, sliced
- 2 T grated Parmesan cheese
Preparation
Step 1
1. Place beans in a lg saucepan; cover w/water.
2. Bring to a boil.
3. Cook, uncovered, for 8-10 min or until crisp-tender.
4. Drain beans; place in a lg bowl.
5. Add tomatoes & onion.
Dressing:
1. Whisk the vinegar, oil, mustard, salt & pepper in a small bowl.
Drizzle beans w/ dressing & toss to coat. Sprinkle w/Parmesan cheese.
