Carrot Cake with Cream Cheese Frosting

This Carrot Cake has an option that includes Walnuts, Raisins and Coconut...Sounds crazy, but it is delicious
Ingredients
- Optional:
- 4 eggs, room temp
- 2 cups sugar
- 4 cups carrots, grated
- 1 1/2 cups oil
- 2 cups all purpose flour
- 2 tsp baking soda
- 2 tsp cinnamon
- pinch salt
- 1/2 cup walnuts
- 1 1/2 cup raisins
- 1 cup coconut
- Frosting:
- 1/2 cup butter, room temp
- 8 oz cream cheese, room temp
- 1 tsp vanilla
- 1 lb. powder sugar

Preparation
Step 1
Preheat oven to 350 degrees
Mix flour, baking soda, cinnamon and salt in bowl. Mix walnuts raisins and coconuts in separate bowl.
In a mixer, cream together sugar and oil. Add the eggs and mix til combined. Add carrots and mix well.
Add dry ingredients and mix until just blended. Add walnut/raisin/coconut mix.
Place ingredients in a baking pan that is greased and floured. Bake for 45-50 minutes or until toothpick inserted in center comes out clean. Cool and frost.
Frosting:
Mix together the butter, cream cheese and vanilla. Add powdered sugar, little at a time, until all is blended.
