Ingredients
- Heirloom & plum tomatoes - clean out all seeds and pulp
- fresh mozzarella - cut into small pieces
- french bread/baguette - cut into thin slices
Preparation
Step 1
Clean the seeds and pulp out of the tomatoes and cut into small pieces. Salt and let it stand. Meanwhile dice the fresh mozzarella into small pieces. Put tomatoes and mozzarella together, add balsamic vinegar until it just coats the cheese and let sit. Meanwhile, lay french bread slices on tray, sprinkle with olive oil, salt and pepper and toast in oven. Put mixture on top of the bread and garnish with sliced green onions or chives.
