Parmesan-Crusted Turkey Cutlets

Ingredients
- 1.5 c panko breadcrumbs
- 3/4 c grated Parmesan cheese
- 3 large eggs, beaten
- 1/2 c all-purpose flour
- 6 turkey cutlets (about 1.25lb)
- Salt & Pepper
- 1 lg head butter lettuce, leaves torn
- 3-4 radishes, thinly sliced
- 4 t EVOO
- 1 lemon, cut into wedges
- 1/4 c shaved Parmesan cheese

Step 1
1. Heat oven to 350F. Spread panko in an even layer on a rimmed baking sheet. Bake until golden brown, about 6 min. Remove from oven & transfer to a plate; mix in Parmesan. Spray baking sheet w/cooking spray; set aside.
2. Place eggs & flour in separate shallow dishes. Season cutlets w/salt & pepper. Dip a cutlet into flour, then into eggs, allowing excess to drip off, then coat in breadcrumbs. Place cutlet on prepared baking sheet; repeat w/remaining ones. bake until cooked through, about 12 min.
3. Meanwhile, in a lg bowl, toss lettuce & radishes w/oil & a squeeze of lemon juice; season w/salt & pepper. Top cutlets w/salad & shaved Parmesan. Serve w/ additional lemon wedges.
