Apple Streusel Muffins

One recipe makes 6 medium size muffins. Double recipe for large muffins.

Ingredients

  • Topping:
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 2 tbsp butter
  • 1/2 cup walnuts
  • Batter:
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2/3 cup brown sugar
  • 1/3 cup oil
  • 1 egg
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • 2/3 cup grated apple
  • 1/2 tsp salt

Preparation

Step 1

For topping, mix all ingredients with fingertips to resemble coarse crumbs.

For batter, lightly grease inside and top surface of 6 muffin cups. Preheat oven to 350. Whisk together wet ingredients. Mix together dry ingredients. Carefully fold together wet and dry ingredients and fold in apples. Spoon batter into prepared pan and top with streusel mixture. Bake 20-25 until done.

Variation:
For crumb topping add flour instead of nuts until just wet.
