LITE-STYLE TOSTADA GRANDE

Ingredients

  • 3/4 lb. lean ground beef
  • 1 can (16 oz.) whole tomatoes, drained and chopped
  • 2/3 cup Picante Sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 7 or 8 flour tortillas
  • 1-1/2 cups shredded cheese
  • 2 cups shredded lettuce
  • 1 medium tomato, chopped
  • 1/2 cup rice avocado, thinly sliced

Preparation

Step 1

Brown meat in 10" skillet, drain. Stir in tomatoes, picante sauce, cumin, and salt, simmer 5-10 minutes or until most of the liquid has evaporated. Cover bottom and sides of 12" pizza pan with tortillas, overlapping if necessary. Spread with meat mixture.

Bake at 350 degrees for 20 minutes. Arrange, lettuce, remaining cheese, tomato and avocado over top. Cut into wedges.
