  • 1 cup coarse ground cornmeal
  • 1 cup porter or dark ale
  • 1/4 cup maple syrup
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 eggs
  • 1/4 cup melted butter

Step 1


Preheat oven to 400°F. Combine cornmeal, porter and maple syrup in small bowl; set aside.
Sift flour, salt and baking powder into large bowl. Add cornmeal mixture, eggs and melted butter. Stir until well blended.
Pour batter into greased 9-inch square baking pan. Bake until wooden pick inserted into center comes out clean, about 20 to 25 minutes. Cool 10 minutes. Slice and serve.

Note
For an extra-flavorful crust, place the greased pan in the oven for several minutes to preheat. When batter is ready, pour into hot pan and bake as directed. The corn bread will develop a thick, brown crust with a deep, rich flavor.
