  • 3.5 Gallon apple juice
  • 9 tbsp Prague powder
  • 1 cup kosher salt
  • 2 lb brown sugar
  • 8 ounce Honey ( more to taste )
  • 8 ounce Maple Syrup ( more to taste )
  • molasses ( to taste )

Preparation

Step 1

place all ingredients into a large plastic container, mix thoroughly , let stand 20 minutes then mix again, pour over over pork and place in fridge for 8 days, Make sure meat is totally covered or turn once a day
