Popovers

Ingredients

  • 2 egg
  • 1 cup milk
  • 2 tablespoon unsalted butter, melted and divided
  • 2 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • 1 cup all-purpose flour

Preparation

Step 1

Whisk together eggs, milk, one tablespoon butter, zest, and salt in a bowl.
Whisk in flour just until combines. Cover batter and chill at least 30
minutes.

Preheat oven to 450°F. Place a popover pan on a baking sheet and heat in
oven 10 minutes. Remove pan from oven and brush cups with remaining one
tablespoon butter. Fill each cup halfway with batter and bake 15 minutes.
Reduce heat to 375°F; bake popovers 20 minutes more. Serve immediately.
