Sweet Potato Hash

Ingredients
- 1 tablespoon olive oil
- 4 strips bacon, chopped
- 1 pound sweet potatoes (about 2 medium), peeled and 1/4-inch diced
- 2 green onions, thinly sliced
- 1/2 cup diced red bell pepper
- 1/2 teaspoon dried thyme
- Salt and freshly ground pepper, to taste

Step 1
In a large nonstick skillet over medium heat, heat the oil and the bacon. When the bacon fat begins to render, about 1 minute, add the sweet potatoes in an even layer. Let cook until the potatoes are browned on the underside, about 4 or 5 minutes. Stir the potatoes and let brown on all sides, cooking about 4 minutes more, stirring twice.
Add the onion, bell pepper and thyme and cook, stirring frequently, until the onion and red pepper are softened, about 1 to 2 minutes. Season with salt and pepper and serve
