MACAROON TARTLET

Ingredients

  • 1 cup blanched almonds
  • 1 recipe cream cheese pastry
  • 2 egg whites
  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • Generous dash of nutmeg

Preparation

Step 1

Spread almonds on jelly-roll pan and bake in preheated 325 degree oven about 15 minutes, stirring occasionally. Whirl a few at a time in blender.

Roll chilled pastry 1/8" thick cut in 3" circles and line 2" muffin cups or fit into 2" fluted tart pans, refrigerate.

In small bowl of mixer beat egg whites to soft peaks, beat in sugar, flavorings, and nutmeg until thick and shiny. Fold in almonds and fill pastry-lined pans about 2/3 full. Bake in preheated 350 degree oven 20-25 minutes. Cool 5-10 minutes before removing from pans.
