Ingredients

  • 32 oz. carton + 14 1/2 oz can reduced sodium chicken broth
  • 14 1/2 oz can crushed tomatoes, undrained
  • 14 1/2 oz can diced tomatoes, undrained (use diced tomatoes with green chilies for more spice)
  • 1 lb boneless, skinless chicken breast, cut into 1/2 in cubes (or roasted chicken cubed or shredded)
  • 1 lg onion, chopped
  • 1/3 c minced fresh cilantro
  • 4 oz can chopped green chilies
  • 1 garlic clove, minced
  • 1 t chili powder
  • 1 t ground cumin
  • 1/2 t dried oregano
  • 1/4 t cayenne pepper
  • 3 c frozen corn, thawed
  • Crushed tortilla chips
  • Reduced fat Mexican cheese blend

Preparation

Step 1

In lg pan, combine first 12 ingredients. Bring to boil. Reduce heat; cover & simmer for 1 hr. Add corn; cook 10 min longer. Top with tortilla chips & cheese.
