Ingredients
- 32 oz. carton + 14 1/2 oz can reduced sodium chicken broth
- 14 1/2 oz can crushed tomatoes, undrained
- 14 1/2 oz can diced tomatoes, undrained (use diced tomatoes with green chilies for more spice)
- 1 lb boneless, skinless chicken breast, cut into 1/2 in cubes (or roasted chicken cubed or shredded)
- 1 lg onion, chopped
- 1/3 c minced fresh cilantro
- 4 oz can chopped green chilies
- 1 garlic clove, minced
- 1 t chili powder
- 1 t ground cumin
- 1/2 t dried oregano
- 1/4 t cayenne pepper
- 3 c frozen corn, thawed
- Crushed tortilla chips
- Reduced fat Mexican cheese blend

Preparation
Step 1
In lg pan, combine first 12 ingredients. Bring to boil. Reduce heat; cover & simmer for 1 hr. Add corn; cook 10 min longer. Top with tortilla chips & cheese.
