Hawaiian Grilled Chicken and Pineapples - 2

Ingredients

  • BASTING SAUCE:
  • MARINADE
  • 3 T soy sauce
  • 3 t br sugar
  • 2 T Rice wine vinegar or sherry
  • 1 T sesame oil
  • 1/4 tsp ginger
  • 1/4 tsp garlic powder
  • 1 1/2 lb skinnless, bonelss chicken breasts cut into small pieces
  • fresh Pineapple cut into sliced
  • 1/2 c pineapple, chopped into small pieces, juice reserved
  • 1 T cornstarch
  • 1/4 c cold water
  • left over marinade

Preparation

Step 1

In small bowl, mix soy sauce, br sugar , rice vinegar, sesame oil, ginger and garlic powder.
Place chcien and small pieces of pineapple in 9x13 and top with marinade.
Cover and marinate in frig for 2 hours, or overnight
Preheat grill
Soak skewers and tall glass of water
Thread pieces of chicken and pineapple onto skewers
Lightly oil grill and cook chicken until juices run clear.
During last 5 minutes, grill fresh pineapple on skewers

Great with rice.
