Sausage, Arugula and Goat Cheese Stuffed Peppers

  • 2/3 lb sausage-2 links (I use turkey sausage)
  • 2 large handfuls arugula
  • 3 bell peppers
  • 4 oz goat cheese
  • Parmesan Cheese



Step 1

Remove sausage from casing and brown in sautee pan with 1 tblspn olive oil. Once browned, add arugula and goat cheese and heat until arugula is slightly wilted. Season with salt, pepper and red pepper as desired. Cut bell peppers in half long ways and fill each half with filling. Sprinkle with grated Parmesan cheese. Cook in 400 degree oven for about 15 minutes.
