Ingredients

  • Cake:
  • 1/2 cup soft butter
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 1 1/2 cup sifted flour
  • 1 1/2 teaspoon double-acting baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/3 cup undiluted evaporated milk
  • 1/4 cup strong coffee

  • Coffee Frosting:
  • 1/3 cup butter
  • 1 dash salt
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups confectioners' sugar
  • 2 tablespoons strong coffee (or as needed)

Preparation

Step 1

Cake:
Cream butter and sugar until light. Add eggs, one at a time, beating well after each addition. Add flavorings. Add sifted flour, baking powder, salt and spices alternately with milk and coffee, beating until smooth. Pour into two 8-inch layer pans, lined on the bottom with paper. Bake in 350 degree F oven 25 minutes. Cool and frost.

Coffee Frosting:
Cream butter. Add salt and vanilla. Gradually beat in confectioners' sugar and enough strong coffee to moisten.
