Ingredients
- 3 Tbsp mayo
- 1 cup red wine vinegar
- 1 head red leaf lettuce, rinsed and torn
- 2 medium fresh tomatoes, chopped
- 1 medium red onion, chopped
- 6 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, chopped
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1 pinch dried oregano
- 1 pound sliced ham
- 1 pound thinly sliced Genoa salami
- 1/2 pound sliced provolone cheese
- 1 large french bread loaf
- 1 cup dill pickle slices
Preparation
Step 1
1. In a small bowl, cover red onions with red wine vinegar and soak overnight.
2. Slice bread in half lengthwise and spread mayo on french bread.
3. In a bowl, whisk together the olive oil, white wine vinegar, parsley, garlic, basil, red pepper flakes and oregano.
4. Layer the ham, salami, and provolone cheese evenly on each roll. Add tomato slices and pickles.
5. Just before serving, toss vinaigrette with lettuce and place on top of sandwich. Close and serve.
