Carrot Casserole Mix - by Karin.

Ingredients

  • 1-Lb. carrots.
  • 2 -eggs.
  • 1/2-cup chopped onion.
  • 1-cup chopped celery.
  • 1-Tbs. parsley.
  • 3/4-cup margarine, melted.
  • 1-Tsp. salt.
  • 8-cups cubed day-old bread.

Preparation

Step 1

In a sauce pan, cover carrots with water; cook until tender. Drain and mash.
In a large bowl, beat eggs; add onion, celery, parsley, margarine and salt.
Stir in carrots. Add bread cubes and mix well.
Pour into a greased (PAM SPRAY), 2-qt.
baking dish. Bake, uncovered at 350 degrees for 30 to 40 minutes or until set.
