Salted Caramel Ice Cream

Ingredients

  • 1/8 teaspoon freshly squeezed lemon juice
  • 1 1/2 cups sugar
  • 1 Tablespoon unsalted butter
  • 3 cups heavy cream
  • 1 cup whole milk
  • 1 Tablespoon kosher salt

Preparation

Step 1

In a medium saucepan over medium high heat, add the lemon juice and then the sugar, 1/4 cup at a time, stirring constantly with a wooden spoon. After all the sugar is added to the pot, continue to cook until it caramelizes to a dark golden brown, 4 to 6 minutes.

Switch to a whisk and carefully mix in the butter. After the butter is completely melted, reuce the heat to medium low and very slowly whisk in cream and milk. Remove from heat and pour into a bowl and chill.

When the mixture is cold, whisk in the salt, then pour into an ice cream maker and process. Transfer into a container and freeze until firm.
