Fruit Roll Ups

Ingredients

  • Mango Pineapple leather
  • 1 tsp lemon juice
  • 1 mango,peeled and diced
  • 1 cup ripe pineapple,cut into chunks
  • 1/2 cup sugar
  • Cranberry Pear Leather
  • 1 tsp lemon juice
  • 1 1/4 cups ripe pear chunks
  • 1 1/4 cups fresh cranberries
  • 1/2 cup sugar
  • Kiwi Leather
  • 1 1/2 tsp lemon juice
  • 2 cups diced kiwis
  • 1/2 cup sugar

Preparation

Step 1

Preheat the oven to 150 or the lowest setting on the oven.
Combine the lemon juice,fruit,and sugar in a saucepan. Cook over medium flame
until the sugar has dissolved. Transfer the mixture to a blender or food processor and puree until smooth.Cover an 11x17 cookie sheet with parch. paper. Pour the pureed fruit mixture onto the paper,spreading it out into a thin even layer. trim the protruding edges of paper. Bake for a minimum of 4-6 hrs, or overnight,until the puree has dried and is no longer sticky.

For a store bought look,transfer the fruit leather to cellophane after it has cooled. Roll and tuck in the edges.
