Stuffed Bell Peppers

  • 6 large bell peppers
  • 1 lb. ground turkey
  • 1 1/2 cups instant rice
  • 1 1/2 cups water
  • 1 large egg - slightly beaten
  • 1 envelope onion soup mix
  • 1 can (15 oz.) tomato sauce



Step 1

Remove tops & seeds from bell peppers. Simmer cleaned peppers (upright) for 5 minutes in 1/2" salted water. Drain & cool slightly before stuffing. (This will eliminate the slightly bitter taste stuffed peppers sometimes have.)

Combine ground turkey, rice (uncooked), water, egg & onion soup mix. Spoon into peppers. Place in shallow baking dish. Pour tomato sauce around peppers. Cover & bake at 400 degrees for about an hour, basting occasionally with tomato sauce.
