Ingredients
- 7 ounces dark chocolate
- 2 cups heavy cream
- 1 cup whole milk
- pinch of kosher salt
- 1 tsp vanilla extract

Place the chocolate in a medium bowl and set aside. Put the cream, milk, sugar, and salt into a small saucepan and cook over medium heat, whisking to dissolve the sugar. Just before the mixture comes to a boil, remove from heat. Pour the hot mixture over the chocolate and let sit for 5 minutes at room temperature. Whisk until the hot cream and chocolate are completely combined and no more flecks of chocolate can be seen. Pour the mixture into a bowl and cool.
When cool, whisk in the vanilla, and pour into an ice cream maker and process, then transfer to an airtight container and freeze until firm.
