Snickerdoodles

Ingredients

  • 2 cups almond flour
  • 1/2 tsp cream of tartar
  • 1/2 baking soda
  • 1 tsp powdered stevia
  • 1/2 cup xylitol
  • 1/2 tsp xanthan gum
  • a pinch of salt
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla
  • 4 tbsp cinnamon

Preparation

Step 1




1. Preheat oven to 350 degrees celcius

2. Mix dry ingredients in a larger bowl

3. Mix wet ingredients together and whisk until well combined

4. Combine wet with dry and mix until just combined
5. Put cinnamon in a small bowl




6. Form the dough into small, inch in diameter balls and rolls in the cinnamon




7.  Using a flat surface (spoon, bottom of a jar) press the cookies into the cookie tray




8. Bake for 10 minutes or until solid
