Olive Oil and Toasted Pine Nut Ice Cream

Ingredients

  • 3/4 cup pine nuts
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • pinch of kosher salt
  • 1/4 cup EVOO

Preparation

Step 1

Preheat the oven to 325F. Spread the pine nuts onto a baking sheet and bake, stirring halfway through, until fragrant and golden brown, 8 to 10 minutes. Watch carefully, as they will burn easily. Remove from the oven and set aside to cool completely.

Put the cream, milk, sugar, and salt into a saucepan and cook over medium heat, whisking occasionally to dissolve the sugar. Just before boiling, remove from the heat and put in a bowl to chill.

When cold, pour into ice cream maker and process. Add the olive oil as soon as the churning begins. During the last minute pf processing, add the pine nuts. Transfer to a container to freeze completely.
