Apricot Brandied Brie

  • 1 *1 lb. Round of brie, rind removed
  • 1 *1 c. apricot preserves
  • *¾ c Mandarin brandy
  • French bread baguettes, apples, pears, grapes

Preparation

Step 1

Let Brie come to room temperature for about 1 hour. Pierce with fork in several places. Place Brie on serving platter. In medium saucepan mix preserves and brandy. Heat until hot but not boiling. Pour mixture over Brie. Serve with bread and fruit.

*I use only 1/6 wedge of Brie, reduce apricot preserves to 1/3 c and add only a few tablespoons of any kind of brandy I have---turns out great.
