Ingredients
- 5 medium onions, sliced
- 3 Tablespoons shortening
- 1 pound thinly sliced beef liver
- 2 Tablespoons all-purpose flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup water
Preparation
Step 1
Cook onions in one Tablespoon hot shortening until golden brown; remove. Cut away membrane and large tubes from liver. Dredge with flour, salt and pepper mixed together. Fry in remaining shortening until browned on both sides.
Add onions and water; cover and simmer for 30 minutes or until liver is tender. Add more water, if necessary, to prevent sticking. Serves 4
