Butterscotch Sauce

Ingredients

  • 1/2 cup unsalted butter
  • 2 cups light brown sugar
  • 1 3/4 cups heavy cream
  • 1 1/2 tsp salt
  • 2 tsp vanilla extract
  • 2 tbsp single malt scotch

Preparation

Step 1

In a medium saucepan, melt the butter over medium low heat. When the butter has melted, stir in the brown sugar using a wooden spoon. Continue cooking and stirring until the sugar does not appear grainy but looks thick and smooth, 8 to 10 minutes. Remove from heat. Slowly whisk in the cream, return to medium low heat and let simmer for another 5 minutes, whisking occasionally. Remove from heat and whisk in the salt.

Transfer the mixture to a large bowl and let cool at room temperature for 30 minutes. Whisk in the vanilla and scotch. The butterscotch sauce can be served warm or at room temperature and will keep in fridge for a month.
