Twice-Baked Squash - Penzey's Spices Recipe

Ingredients

  • 2 squash (buttercup, butternut and acorn are all great)
  • 4 TB. butter (1/2 stick)
  • 1/4-1/2 tsp. PENZEYS CINNAMON
  • 1/8-1/4 tsp. GROUND CARDAMOM
  • 1/4-1/2 tsp. salt, to taste

Preparation

Step 1

Preheat oven to 350°.

Wash and cut the squash in half lengthwise, scrape out seeds, and place, cut-side down in a baking dish.

Bake at 350° for 20-40 minutes, depending on size and toughness of squash. Remove from the oven and flip the squash over. You may need to slide a spatula under the squash to have it come up nicely.

Add 1 TB. butter to each half along with a sprinkle of CINNAMON and CARDAMOM.

Mash the squash a bit or scrape it with a fork some to mix everything together. Place in the oven for a few extra minutes. Add salt to taste and serve.


Cooking time: 25-45 minutes
