Great Grains Energy Balls

A healthy and delicious no-bake snack made with whole grains, dried fruits, nuts, and seeds and bound together with honey and peanut butter. This versatile recipe can be easily adapted using whatever ingredients you like.
Ingredients
- 3 cups Great Grains brand boxed cereal (with raisins, dates, pecans)
- 1/3 cup dry oatmeal
- 1/4 cup milled flax seed
- 1 tablespoon chia seeds
- 1/3 cup flaked coconut, toasted if desired
- 1/4 cup mini chocolate chips
- 1/2 cup peanut butter (I used crunchy)
- 1/3 cup honey
- 1/2 teaspoon vanilla extract, optional
Preparation
Step 1
In a mixing bowl, mix all ingredients until thoroughly combined. (Unless you have a mighty strong arm, use your hands like I do!) Cover and refrigerate at least an hour to firm up.
Shape into 1" balls OR press out about 1/2" thick in a shallow, rimmed baking pan then cut into 1" squares with a sharp paring knife before serving. Store covered in the refrigerator for up to a week.
Makes about 30 balls.
((NOTE--If the mixture seems a bit too dry then add a little more honey or peanut butter, if it gets too gooey then add more oats or any of the other dry ingredients. If desired, the finished balls can be rolled in finely ground nuts, milled flax seed, or ground coconut.))
