- 2 cups sugar
- 1 cup water
- 2 large peaches, peeled, pitted, quartered
- 2 tablespoon freshly squeezed lemon juice
- 1 tablespoon peach liqueur

Step 1
Combine the sugar and water in a saucepan and cook over medium heat, whisking occasionally, until the sugar has dissolved. Remove from heat and set aside. Meanwhile, put the peaches in a blender with the lemon juice and puree thoroughly, 30 to 35 seconds. Pour the peach puree into a large bowl and whisk in the reserved sugar syrup. Transfer to a shallow pan or bowl and place in the fridge to chill completely.
When the mixture is thoroughly chilled whisk in the schnapps. Pour into an ice cream maker and process, then transfer to an airtight container to harden.
