Spinach Lasagna

Ingredients

  • 1 package of PRIMO Spinach lasagne noodles
  • 1 package frozen chopped spinach, thawed, drained
  • 2 eggs, lightly beaten
  • 1 tub (475g) ricotta
  • 1/2 cup chopped red pepper
  • 1/4 cup butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 3/4 cup parmesan cheese, divided
  • 3 cups shredded mozzarella cheese

Preparation

Step 1

Preheat oven to 350 degrees.

Cook spinach lasagne noodles as suggested on package.

Combine spinach with eggs, ricotta cheese, red pepper, salt and ppepper.

In a saucepan over medium heat, melt butter and cook onion and garlic for 2-5 minutes. Stir in flour, then milk. Cook and stir until bubbling and thickened. Add 1/2 cup parmesan cheese, heat until melted and smooth.

Pour 1/2 cup sauce over bottom of greased 13x9x2" baking pan. Top with 1 layer of 4 lasagne noodles, overlay edges slightly. Layer with 1/2 spinach mixture and 1/2 mozzarella cheese. Repeat layers. Top with last 4 noodles.

Pour remaining sauce evenely over lasagne, sprinkle with remaining parmesan cheese. Bake for 35-45 minutes.
