One Skillet Chicken Mozzarella Pasta

Ingredients

  • 1 pound Rigatoni pasta, uncooked
  • 2 Tbsp olive oil
  • 2 cups cooked, shredded chicken
  • 1 cup frozen, diced onion
  • 1 tsp minced garlic (2 cloves)
  • 1 jar (25 oz) Marinara sauce
  • 2 cans chicken broth
  • 1 cup water
  • 1/2 tsp crushed red pepper flakes (omit if you are VERY sensitive to spice)
  • 1 Tbsp dried parsley flakes
  • 8 oz fresh mozzarella, cut in to cubes
  • 8 fresh basil leaves, chop

Preparation

Step 1

In a large skillet saute garlic and onion in olive oil for 2 minutes on medium heat.

2. Add in uncooked pasta, chicken, marinara sauce, broth, water, crushed red pepper, and parsley. Stir to combine. Bring to a boil, cover pan and reduce heat to a simmer. Cook for 20 minutes.

3. Add in cubes on mozzarella and cover with lid for 5 more minutes to let the cheese get soft.

4. Remove from heat and garnish with basil leaves and serve.
