One Skillet Chicken Mozzarella Pasta

Ingredients
- 1 pound Rigatoni pasta, uncooked
- 2 Tbsp olive oil
- 2 cups cooked, shredded chicken
- 1 cup frozen, diced onion
- 1 tsp minced garlic (2 cloves)
- 1 jar (25 oz) Marinara sauce
- 2 cans chicken broth
- 1 cup water
- 1/2 tsp crushed red pepper flakes (omit if you are VERY sensitive to spice)
- 1 Tbsp dried parsley flakes
- 8 oz fresh mozzarella, cut in to cubes
- 8 fresh basil leaves, chop

Preparation
Step 1
In a large skillet saute garlic and onion in olive oil for 2 minutes on medium heat.
2. Add in uncooked pasta, chicken, marinara sauce, broth, water, crushed red pepper, and parsley. Stir to combine. Bring to a boil, cover pan and reduce heat to a simmer. Cook for 20 minutes.
3. Add in cubes on mozzarella and cover with lid for 5 more minutes to let the cheese get soft.
4. Remove from heat and garnish with basil leaves and serve.
