Ingredients
- Chicken:
- 4 boneless, skinless chicken breasts
- 1 tbs EVOO
- 1/2 tsp Italian Seasoning
- 1/4 tsp garlic powder
- 1/3 tsp salt
- 1/8 tsp black pepper
- Sauce:
- 2 tsp EVOO
- 2 tbs finely diced yellow onion
- 1/4 cup balsamic vinegar
- 1 tbs light brown sugar
- 1 tbs Dijon mustard
- 2 tsp minced garlic
Preparation
Step 1
1. Place chicken, olive oil, Italian seasonings, garlic powder, salt and pepper in a 3 qt baking dish and toss all to evenly coat chicken. Cover and refrigerate for 15 minutes or longer to infuse flavors.
2. Preheat oven to 375 degrees. Start the sauce by sauteing olive oil and diced onion in a small saucepan over med high heat for 2-3 minutes, or until onions are translucent
3. Add remaining sauce ingredients to the saucepan and bring to a simmer, cooking for 5 minutes or until slightly thickened.
4. Pour sauce over seasoned chicken in baking dish and bake 30-35 minutes or until no longer pink.
