Balsamic Wings

These balsamic wings are delicious with the perfect mix of sweet and tang!
Ingredients
- 18 pastured, free range chicken wings
- 1 cup balsamic vinegar
- 2 TB freshly grated organic ginger
- 3 organic garlic cloves
- 1 organic lemon, zested and juiced
- Real salt or Himalayan sea salt
Preparation
Step 1
In a large non-reactive bowl, mix together balsamic, ginger, garlic, zest, juice, and sea salt. Add wings, tossing well, cover and marinate at least four hours or overnight.
Remove from the fridge and let wings come to room temperature. Preheat oven to 350° F. Meanwhile, heat a large cast iron skillet over medium high heat with your fat of choice. Sear wings {you may need to work in batches} for a few minutes – just to get a good color.
Transfer browned wings to the oven in the skillet and cover. Cook for 30 minutes, turning several times. Remove from oven and return to the stovetop. Add remaining marinade and cook on the stove over medium heat until sauce has reduced and thickened. Garnish with lemon zest and serve.
Yield: 4-6 servings
