Ingredients
- BLUEBERRY COMPOTE:
- 2 cups fresh or frozen blueberries
- 3/4 cup sugar
- 2 tbsp freshly squeezed lemon juice
- FROZEN YOGURT:
- 2 1/2 cups goat's milk yogurt
- 1/2 cup sugar
- 1/2 cup honey
- 1 tbsp vanilla extract

Step 1
To make the compote, put the berries, sugar, and lemon juice into a small nonreactive saucepan. Bring to simmer over medium-low heat and cook, stirring occasionally, until thick, 10-15 minutes. Remove from heat and pour the compote into a shallow pan or bowl. Place in fridge to cool completely, about 1 hour.
To make the yogurt, in a large bowl combine the yogurt, sugar, honey, and vanilla. Whisk until the sugar and honey are completely dissolved. Place in the fridge and hill thoroughly.
When the yogurt mixture is cold, pour into ice cream maker and process. Take out and place into airtight container in layers, alternately layering with blueberry compote in three layers. Cover and freeze until firm.
