Ingredients

  • 1 c. graham cracker crumbs
  • 3 Tbsp. white sugar
  • 3 Tbsp. melted butter
  • 3 (8 oz) packages cream cheese
  • 1 c. white sugar
  • 2 tsp. vanilla extract
  • 1 c. sour cream
  • 1/3 c. Baileys Irish Cream Liqueur
  • 4 eggs (slightly beaten)
  • 1 c. sour cream
  • 1/4 c. white sugar

Preparation

Step 1

Mix together cracker crumbs, 3 Tbsp. sugar and melted butter. Press into bottom of a 9 inch springform pan. Bake in 350 degree oven until slightly browned (5-6 minutes). Remove from oven but maintain oven temp.

Beat cream cheese, 1 c. white sugar and vanilla until smooth. Blend in 1 c. sour cream and liqueur. Add eggs 1 at a time and mix only until combined. Pour filling on top of crust and bake until center no longer moves (about 50-60 minutes). Remove from oven and maintain oven temp. Cool 10 minutes.

In a small bowl mix 1 c. sour cream and 1/4 c. white sugar until smooth. Spread on top of cheesecake and bake an additional 10 minutes. Remove from oven. Let cool at room temp for 1 hour and then refrigerate overnight. Remove from pan.
