Ingredients
- cherry tomatoes
- 1 sm onion
- 1 jalapeno, chopped
- 2 garlic cloves, 1 chopped, 1 smashed
- 1/2 tsp hot sauce
- 1 1/2 tsp sugar
- 1 tsp cumin
- 2 tbsp + 2 tsp olive oil
- Trader Joe's Cuban beans
- 4 lg eggs
- 4 6-inch corn tortillas, warmed
- 1/2 cup feta cheese
- 1/4 cup chopped cilantro
- avocado, diced
- lime, juice for garnish
Preparation
Step 1
Salsa:
Chop tomatoes and onion, add jalapeno, chopped garlic, hot sauce, sugar, cumin, salt and pepper. Heat 2 tsp olive oil over low heat, fry salsa until thickens 3 min. Remove to bowl, set aside.
Add beans to same pan with smashed garlic, 1/2 cup warm water, and a pinch of salt, cook over low heat until warmed, smashing some beans. Mwanwhile, heat remaining 2 tbsp oil in another skillet, fry eggs, sunny side up, season with pepper.
