Fruity Breakfast Rice

The rice is a nice change from oatmeal. Sprinkle with a teaspoon of wheat germ for an extra fiber boost. Replace bananas and strawberries with any fruit.

Ingredients

  • 1/2 cup medium grain brown rice, rinsed
  • 1/2 cup milk
  • 1/2 cup water
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup sliced bananas
  • 1/4 cup chopped strawberries

Preparation

Step 1

1. In a medium saucepan, combine rice, milk, water, vanilla, cinnamon and salt. Bring to a boil over medium high heat. Cover, reduce heat ot low and simmer, stirring occasionally, until liquid has been absorbed, about 50 minutes. Let cool.

2. Add fruit of choice.
