Lentils They'll Love, with Butternut Squash

The richness of squash in this recipe combines well with the savory bell pepper and the protein filled lentils.

Ingredients
- 1 small bell pepper
- 1/2 butternut squash
- 1/2 cup lentils
- 1/2 teas cinnamon
- 4 cups water
- 2 tblsp orange juice
Preparation
Step 1
1. Rinse the lentils and place in a pot with the water. Bring to a boil.
2. Wash the pepper and remove the seeds. Dice into small pieces and add to lentils.
3. Wash the squash and slice in half. Peel the squash and remove the seeds. Dice into pieces, and add to the lentils.
4. Add the cinnamon and continue cooking for 40 minutes, or until lentils are completely tender.
5. Allow to cool, then fork-mash with ornage juice before serving.
