Baby Ratatouille

Ratatouille is a French vegetable stew. As shown here, this recipe can be cooked on the stove, but it's also a fantastic slow cooker meal. Microwaving is also acceptable, although the vegetables won't have the chance to simmer together and the flavors will not be as developed.

Ingredients
- 1 cmall zucchini, diced
- 1/2 small onion, diced
- 1/2 small eggplant, diced
- 16 oz can stewed tomatoes
- 1/2 teas oregano
- 1/2 teas parsley
- 1/2 teas basil
- 1 tblsp olive oil
Preparation
Step 1
1. Heat the oil in a medium saucepan. Saute onion until it begins to brown and turns translucent.
2. Add the eggplant, zucchini, and tomatoes into the saucepan. Bring to a boil, then reduce to a simmer.
3. Cook for 20 minutes. Stir in the herbs, then cook for another 20 mintues. Allow to cool, then fork mash if necessary.
